This change converts vendor-specific CatchTable ceremony into a caller-friendly facade contract. Availability now keeps the existing time_slots output while adding selectable reservation choices, payment/create-support metadata, and next_action/action_hint guidance. Reservation and waiting write operations verify signed opaque choices and revalidate them against current upstream state before any hold/create side effect.
